July 31, 2023The fish taco is a popular Mexican street food that became a hit in the USA. A fish taco is a piece of fried or grilled fish tucked into a tortilla and then topped with coleslaw, creamy sauce, and salsa. Although it is a dining masterpiece, the fish taco had humble beginnings.
Mexican Roots
Foodie historians have traced the origins of the fish taco to Baja California in Mexico, a long, large peninsula south of California. Unfortunately, these experts cannot pinpoint the town where they were first made. They have narrowed it down to Ensenada or San Felipe, where taco stands began increasing in the late 1950s.
Before the term “fish taco” bewassed, historians believed that there were both Spanish and Asian influences on Mexican cooking in the fishing villages of Pacific coastal areas. Thus, fast lunches were made by wrapping cooked fish in corn tortillas. Eventually, the invention was topped with cabbage, cilantro, jalapenos, and tomatoes and became ideal food stand fare.
American Introduction
Ralph Rubio is credited for introducing fish tacos to the United States. He loved snacking on them when he went on spring break to San Felipe. He and his father opened a restaurant in San Diego in 1983 and started selling fish tacos. Although it seemed unusual then, fish tacos eventually made avid fans in California and the rest of the country.
